We make the gluten-free batches on Mondays on purpose: so that several days pass since the last time we touched flour with gluten and the kitchen air is as clean as possible. Combined with the powerful extraction, residual particles are minimised.

Step 1

Deep clean on Monday

Before we start, we clear out any residue. The kitchen has gone several days without touching flour with gluten and the extraction system has been renewing the air.

Step 2

Preparation and coating done separately

Béchamel, filling, shaping and coating are done in a dedicated area with utensils that are not shared with the gluten batches that day.

Step 3

Its own fryer, its own oil

When your order of fried ones comes in, we make it in the dedicated gluten-free fryer — the one that only touches this, with its own oil that it does not share with anything else.

How do you avoid cross-contamination with gluten?
We are members of ASOCECA (Coeliac Association of the Canary Islands) and they have already reviewed our kitchen and the way we make the croquettes. We have a specific fryer for gluten-free with its own oil, we make the gluten-free batches on Mondays — several days after the last time we used flour with gluten — and we have a very powerful extraction system to minimise flour particles in the air.
When do you make the gluten-free croquettes?
On Mondays. We do it this way on purpose: by the time we start making the gluten-free ones, several days have already passed since the last time we touched flour with gluten, so the risk of residual particles is minimal.
Do you make them fried and frozen?
Yes, in both formats. We make the fried ones for you in the dedicated gluten-free fryer so you can take them away freshly made; the frozen ones you take home and they go straight into the freezer. The minimum lead time from online payment is 2 working days.
Where can you buy the gluten-free croquettes in Las Palmas?
At our physical shop on José y María 34 (Lomo Los Frailes, Las Palmas), Tuesday to Sunday from 12:00 to 15:00. You can also order them through the website and come to collect them whenever you like within the opening hours.
Do you have gluten-free flavours that are also vegan or lactose-free?
Yes. Each flavour has its dietary labels on the product page (gluten-free, vegan, lactose-free). Tap any croquette on the grid of this page and you will see all the variants available for that flavour.
How long do the frozen croquettes last?
In your home freezer they keep perfectly for several months without losing texture. You will see the exact best-before date on the label of the pack you take away. The key thing: straight from the freezer to the pan or the fryer, without defrosting first.

Has it been a while since you ate real croquettes?

We know how hard it is to ask for "a gluten-free one" and get strange looks. Not here: each product page tells you clearly which flavours have a gluten-free version, made with a dedicated fryer and oil.
